Do you hate turning on the oven in the summer? Because I know I sure do! That’s why this super easy no bake cheesecake is PERFECT for summer! Not only do you not have to bake it but it’s so simple to make.  You will absolutely fall in love with this silky, smooth,  creamy, decadent dessert. No oven required! My family loves this cheesecake recipe and we make it for various holidays. The hardest part about making this eays no bake cheesecake is waiting for it to set! It’s so good you’ll want to eat it by the spoonful. I promise though, it’s worth the wait! So, forget the water bath and hours of baking time, and try this yummy and super easy no bake cheesecake. I know your family will love it!

Ingredients

  • 3, 8oz packages of cream cheese (softened)
  • ¾ cup granulated sugar 
  • ¼ cup sour cream
  • 1.5 TBS lemon juice
  • 3 TBS powdered sugar
  • 2 tsp Vanilla extract
  • 1 8oz tub of cool whip, defrosted
  • 1, 9 ounce premade Graham Cracker pie crust
  • Mixed berries or toppings of your choice

In a stand mixer (or large bowl with a hand mixer), beat together the three packagaes of cream cheese on medium speed. Mix until the cream cheese looks combined and smooth (about 5 mins). (It’s easier if you soften your cream cheese first. You can do so by unwrapping your cream cheese, put on a microwave safe plate, and heat for 30 to 45 seconds.

Add the sugar to your stand mixer and continue to mix until smooth, scraping the sides of the bowl as needed with a rubber or silicone spatula.

Next, Add the sour cream and mix until well combined and mixture looks smooth.

Add the powdered sugar, lemon juice, and vanilla extract. Mix with a silicone spatula to combine, then mix it again in the mixer. Beat on medium speed for 2 to 3 mins. You want your mixture to be really smooth with no lumps.

Now fold in your tub of defrosted cool whip with a silicone spatula until fully combined. This will take several spatula turns.

Transfer the mixture to your prepared Graham Cracker crust, cover, and refrigerate for 3 hours.

Once the cheesecake is set and ready to serve, add on any toppings you like or serve as is. Cut into 8 slices and enjoy!

Tips

  • Softening your cream cheese before mixing will make it easier to mix. 
  • Scrape down the sides of your bowl and beater  to ensure everything is combined and there are no lumps. 
  • If you don’t have a stand mixer you can use a hand mixer.
  • Defrost your cool whip fully before folding it into your mixture. 
  • If you have too much filling for your pie crust, store the extra in a sealed Tupperware and store in the fridge. You can use this as a dip, make a parfait with it, or just straight up eat it! It’s so yummy with or without crust! 
  • Cut your Cheesecake into 16 slices for kids or if serving alongside other desserts as well.
